Since it was the first nice spring day of the year, wife and I decided to grill out for dinner last night. So I stopped by the local farm market to pick up a couple of steaks. I was surprised to find this cut called flat-iron steaks. I'd seen them before in a very few steak house menus but never before on sale so I bought a couple. The price was really good ($4/lb) considering they were organic/grass fed steaks.
Anyway, looked into their "history" last night and found out that:
"The flat iron steak is a cut of beef which was discovered by researchers at the University of Nebraska. The researchers were trying to figure out how to use traditionally less desirable cuts of beef, and in the process, they found the extremely tender flat iron steak. The cut is also called a top blade steak, in a reference to the region of the cow that it comes from. A growing number of butchers and grocers are stocking flat iron steak, in response to consumer demand."

I'm still partial to Ribeyes but this was a tasty/reasonably priced alternative!
