  • Frugal Homemade Rice-A-Roni

    This looks delicious...

    Chicken Rice a Roni

    1 cup long grain white rice
    1 cup angel hair pasta, broken into pieces
    4 Tbsp butter
    1/2 of an onion, chopped {About 1/2 cup}
    3 cups water
    4 tsp Chicken Better than Bullion chicken base
    2 tsp dried parsley flakes {optional}

    Melt butter in a large saucepan over medium heat. Add rice and pasta. Stir to make sure the rice and pasta don’t burn. Cook until the pasta is light brown.

    Add water and bullion and parsley if you like the green flecks

    Turn heat to high and bring mixture to a boil. Once it boils, turn heat to low and cover pan with a lid. Cook 15 minutes or until all the water is absorbed. If water absorbs but the rice isn’t tender, add a bit more water and continue to cook until tender.

    You can bring the cost down even more by making your own chicken stock and cooking the rice and noodles in that instead of using the chicken base and water. I think it tastes better too, but I have a mighty high opinion of my stock making skills.

      For the time involved is it worth the savings? Doesn't it cost $1 or less per box?

        This. The stores in my area sometimes have a Buy 10 and Save type of deal that gets the price below $1.

          He is just sharing a recipe. Not that I am a Rice-A-Roni advocate, but the recipe would make a lot more than one package's worth. It also has no salt, unless you use salted butter. I checked a package of some Knorr rice junk my house sitter left, and it has 34% of your daily intake of salt in one serving. It sounds awful. I don't know why anyone would waste money on prepared rice sides. All I do is throw in some seasonings while the rice is cooking and call it a day.

            Better than the box

            I tried this last night. Much tastier and healthier than box not to mention more affordable. An entire box of pasta costs like .79 and this recipe only calls for a small fraction of that. A cup of rice, is what at most .50? The bullion is the only significant cost, but again you only use a fraction. The recipe in total yielded a generous 4 servings, so per unit price I think homemade is better!
