A woman I work with brought in some cookies the other day. I tried one and they were really good. She said they are super simple to make - only 3 ingredients (4 if you add nuts). I don't know if they even are technically cookies but I'm not sure what else to call them.
3 ripe bananas
1 cup of oatmeal
mini chocolate chips
chopped walnuts (or nuts of your choice)
Mash the bananas well
Add the oatmeal and mix well
Mix in the chocolate chips and the nuts
Put spoonfuls of the mixture on a baking sheet (covered in parchment paper or greased if you prefer)
Bake at 350 for 15 minutes
That's it. One bowl, one fork, one measuring cup, one cookie sheet. No flour or sugar or other ingredients. Quick and easy.
I made a batch this afternoon for the first time and both DW and DD liked them. The one thing I learned is that unlike cookie dough, they won't spread at all when baked. I used a scoop to portion off the dough so the way they went onto the tray as little balls is the same way they came off. Next time I'll flatten the balls into more of a cookie shape rather than a ball, though either way is fine. I just think the centers would cook more evenly if they were flatter.
