  • Let me have your best corn fritter recipe

    DD asked me to make corn fritters so I found a recipe at cooks.com and made a batch today. They were pretty good but not great. They were a bit too doughy and not enough corn. Do any of you have a favorite recipe.

    We don't deep fry, just pan fry in some oil if that matters.

        I have a homemade wholewheat corn dog recipe, you can use the batter for fritters. Will come back later this afternoon and edit this post with it...

        Corn Dogs
        Mix:
        1 C cornmeal
        1 C whole wheat cake flour
        1 Tbs sugar
        1 T baking powder
        1 tsp chili powder
        1 t salt (optional)

        Mix: (in a separate small bowl)
        1 C milk
        2 eggs, beaten
        1/4 C corn oil

        Pat dry a package of hotdogs. Place skewers in each (use popsicle sticks from the craft store, chop stick from the dollar store, or wood skewer from the grocery store). Stir milk mixture into the flour mixture until batter just comes together. Heat 1" oil in a fry pan. Dip hotdogs to coat with batter. Cook in oil about 2-3 minutes turning halfway. Drain on paper towel.

        NOTE: this recipe is forgiving and you can substitute stone ground or white flour although the final taste and textures will be slightly different. Also mixing the batter a bit extra is not going to be a problem. The trick is to have just the right number of hotdogs to use up the batter. You can probably stretch the recipe to make 1 1/2 packages of regular size hotdogs. Or 2 packs of big franks. I also cut the extra long hotdogs in half and use at least 2 packages.

        FRITTERS: try dropping scoops of batter (approx. 1/8 C size) into the oil for just fritters.

          pretty cheap jewelry, that recipe looks great! I like that you can use the batter for a variety of things. What else do you use it for besides corndogs and fritters?

            It also never occurred to me to make a corn dog......The whole point of hot dogs is the lack of effort involved in cooking them...that and low price

              I've been watching this thread in amusement. I'm guessing not many people make fritters any more. Ha-- I grew up in the South, the land of fried foods, and certainly of corn fritters. However, my Mom almost never fried anything (for health reasons), so I don't have any folksy, passed-through-the-generations way of making them. If you've already tried some recipes and not liked them, you might look up hush-puppy recipes and add whole kernel corn, see if you like those any better. Do use plenty of baking soda to get them to lighten up.
