      • Herb Baked Salmon, Baked potato with sour cream and butter, corn on the cob for my hubby and a mixed salad. Plus jello later on.

        • Not today, but on Sunday I made a bunch of chicken curry (love it), and it was also lunch today and will be lunch tomorrow. yum

          • I made seasoned small red beans from scratch with white rice. I also made a salad of cooked diced potatoes, cut green beans, red onions, with a cider vinegar and olive oil.

              • We're having baked herb bay scallops over pasta, peas, and a small salad.

                • Breakfast: braised lettuce (yes you read that right) + tofu + onion + garlic + soy sauce.

                  Lunch: Cheese sandwich with a smear of tomato paste; broccoli

                  Supper: Probably baked chicken from last night; carrots; more broccoli; lettuce + green onion + snow pea salad.

                  I'll spend very little time on food prep today. Picking the peas will take longer than anything else.

                  • Joan of the Arch: I agree with you about braised lettuce. It is delicious. I make a Grilled Cheese sandwich with a bit of mayonaise on the inside of the bread and lettuce. It is a great combination. I was a waitress years ago and had a customer order this combo which I thought was a bit odd but I eventually made it for myself and it has become one of my favorite sandwiches.

                    Some people even add a little bit of onion that is sliced very thin or even shaved onto the sandwich as well.

                    • Made chicken pot pie yesterday as a plan-over for Sunday's baked chicken. It allows me to use up the left over mashed potato, small bits of frozen veggies that are insufficient for family portion and crudities that were replaced salad on Sunday. I'll make a fresh salad to support the left over savory pie and there is jello for dessert with or without ice creme for DKs. 9 PM snack is watermelon that wasn't sliced on Sunday

                      • we're having a slow cooked roast (cheap cut) along with baked potatoes and carrots. affordable and easy, which is fantastic since i'm working night shift tonight!

                        • We're having chicken tacos! The chicken is cooking in a slow cooker. It will be served with a mango salsa, lettuce, tomato, and guacamole. Yummmmm.

                          • It is Saturday, we are going out! It will be inexpensive and probably a restaurant that has a loyalty program. In addition, I will earn frequent flier miles on my purchase.

                            • Tonight, I'm going to cook up some white rice, heat up some black beans and add a little bit of ground beef cooked with seasoned salt. And finally the magic touch: copious amounts of siracha and soy sauce! So simple yet so tasty.

                              • Beef Stroganoff over rice, yet another plan over from leftover slices of yesterday's company Rump Roast. Heated in a home made mushroom sauce enhanced with a few tablespoons of sour creme, crisp chef salad and mixed veggies. Lemon loaf with/without ice cream for afters.

                                It's remarkable...if you give a $10. name to leftovers it's accepted as a totally different meal even though our guests yesterday enjoyed roast beef, bechamel, jeweled rice, cucumber salad, saute sweet pepper and Lemon Pound cake.
